Amarillo® offers solid bittering properties in the 9-11% Alpha Acid range and it packs one of the highest myrcene oil contents (60-70% of total oils) of any hop. This gives it a very sweet citrus flavor and aroma that is closer to oranges than grapefruit. The citrus character is backed by some light floral notes as well as melon and peaches.
Cascade is the hop that made hops famous. It single-handedly defined the American Pale Ale style. Cascade is bursting with zesty grapefruit flavor and aroma from the high levels of myrcene oil. It lends a pleasant and balanced bitter, but is ideally used in late hop additions to maximize that bright flavor and aroma. The bright citrus is backed by some soft floral and spice, which rounds out the profile.

Saaz is the famous aroma landrace variety originating in the Czech area of the same name. It has very mild, pleasant noble hoppy notes perfectly suited for and defines the Czech-style pilsner beers.

East Kent Golding is considered to be the quintessential English hop, long held as one of the island's favorites for ales and pale ales.

Hallertau Mittelfrüh is the Kaiser of German hops. It possesses the classic noble aroma popular in all of the traditional German styles. Humulene is the prominent oil in the hop and comprises around half (45-55%) of the total oils. It has a mild bittering potential (3-5.5% AA), but is clean, crisp, and perfect for pilsners.

Nelson Sauvin™ hops impart a grape-like flavor to beers, defined as a cool climate white wine grape flavors. Other descriptors include extreme fruitiness, Passionfruit, and “Fresh Crushed Gooseberries”.
Although not used much as a bittering hop, many craft brewers and homebrewers favor Simcoe for its unique aroma profile composed of piney, woody, and grapefruit citrus notes mixed with slightly dank and spicy notes of onion and garlic. These aromas make the hop resemble Cascade and Chinook, with some elements resembling the key aromas of Amarillo, CTZ, and Summit.

Topaz™ is a rare gem that has many different facets. It is definitely an efficient bittering hop that is high in alpha acids, but Topaz's bright and breezy nature shows in late additions and with dry hopping. In the boil Topaz can present with resin and pine, but there are light fruit flavors of lychee and clementines from low heat applications.
Willamette is a triploid aroma hop. When brewed, Willamette features complex spiciness characterized by both herbal, floral and fruity notes.
